Food & Beverage Service

A hotel is an establishment which provides lodging facilities, along with meals, banqueting facilities and other additional services for its guests. In simple words a hotel is defined as “A home away from home.”

A hotel has four core departments; apart from core departments which remain same for all the hotels, there are many additional and supporting departments which vary depending upon the size, location, star category, brand and clientele of the hotel or hospitality establishment.

1. Food Production
2. Food & Beverage Service
3. Front Office
4. Housekeeping

All these departments are core because they are “Operational and Revenue Producing”, while other departments are “Operational, but Non — Revenue Producing”, for example Maintenance, Human Resources, etc.

The Food & Beverage Service department is an essential department which is responsible for service of Food & Beverage and ensuring ultimate dining experiences for the guests. It is also responsible for menu planning, menu engineering as per the type of hotel or hospitality establishment in liaison with the Executive Chef. The Food & Beverage Department is divided into outlets or sections:

1. Restaurant
2. Room Service or In Room Dining
3. Bar
4. Banquet

After completion of the course a student will start his/her career from Job Trainee, to being promoted to Captain, Butler, Assistant Supervisor, Supervisor, Assistant Manager, Food & Beverage Manager, Food & Beverage Director, and General Manager. The hierarchy, designations and salary will vary depending upon the caliber of the candidate, star category of the hotel, location and brand of the hotel.
